We dry age our bone-in cuts from Rangers Valley and Stanbroke in-house for a minimum of 28 days.  We dry age under controlled conditions to maintain an optimal temperature and humidity level, as well as proper air flow. During the dry aging process, naturally occurring enzymes in the meat break down the muscle fibers to make a more tender steak, as well as breaking down the fats into fatty acids, which dramatically enhances the flavor.  If you love our regular Australian wagyu, you'll love our dry aged wagyu even more.
