Dry aging allows the enzymes in the meat to break down the muscle fibers and marbling to create a much more tender, flavorful experience. We dry age our bone-in steaks a minimum of 28 days. At MW Prime Meat, we are proud offer only USDA Prime beef. Raised in the Midwest, and grain-fed and finished, we select only the best, most marbled cuts of USDA Prime from farms in the Midwest.
